Matt didn’t fall into BBQ. He chased it.
More than two decades ago, he and a close friend hit the road. They weren’t just traveling—they were chasing fire. BBQ competitions took them from Reno to Tampa Bay, from Vegas to who-knows-where next.
They didn’t go for the trophies. They went for the lessons. Every cookoff was a classroom. Every rack of ribs, a test.

Eventually, Matt got his own pit. Went solo. And proved what he’d learned.

Still, the fire kept burning.
He teamed up with Shellina—his partner in more than one sense of the word—and together, they created something all their own. BBQ sauces. Dry rubs. No shortcuts. No mass production. Just handcrafted flavor built from scratch.
Next came the truck.
They weren’t waiting for customers to find them. They took Fat Matt’s BBQ on the road—festivals, parking lots, weddings, backyards. Michigan got to know their name one sandwich at a time.
These days, they’re still rolling. Still cooking. But now, anyone can get a taste. They ship their sauces and rubs across the country—bringing Michigan BBQ to porches and patios coast to coast.
We’ve had it. Multiple times.
Chunky Heat walks the line—sweet up front, with a slow burn that doesn’t push too hard. Hint of Heat rub is bolder. We smoked a pork butt with it that barely needed anything else. But of course, we added Signature Sauce anyway. Because that’s just how it goes.
